Wayland Amazon 2 520 Folding Kayak With Sailing Rig This is a convertible two seater expedition model meaning it can be paddled solo or with 2 people. With two paddlers you can move at a fair clip, I have also used this for solo trips around the west coast of Scotland using the extra space for camping gear. Wayland also make the 'Klepper' brand kayaks under license and they are very similar in most regards, very good quality, tough hypalon hull (as is used for RIBs) and canvas topsides. The hull is reinforced with extra rubbing strips along the keel and at the bow and stern. I would say puncturing is as little a concern as with fibreglass (maybe even less so as field repairs are even easier...).These have been used by armed forces for covert operations so are tough and reliable.
With inflatable sponsons and buoyancy bags fore and aft they are unsinkable. This is the expedition model which means an array of deck fittings which includes front deck paddle pockets / holders, front side and rear 'pannier bags', and rear side PET bottle holders. Complete with standard seats which allow for 1 or 2 paddlers and spray deck with integrated waist skirts, which is of the convertible type which also caters for 2 paddler set-up or a solo paddler (paddler sits in the middle). Also comes with the factory sailing rig, its been a while since I used the sails but it does sail well (I have a sailboat for sailing so only use this for paddling adventures). It is lug rigged with a small foresail to aid working to windward.

Be warned even when packed up this is bulky and quite heavy, I would recommend looking into couriers on something like shiply to get an idea of the cost and timescale.
